Books:
Macintosh Human Interface Guidelines, Apple Computer Inc, 1992.
This "manual" outlines the design rationale behind Apple's original Macintosh interface. From icons to folder actions, this book not only tells you how you should design within the Mac UI but (more importantly) why.

Designing Web Usability: The Practice of Simplicity, Jakob Nielsen, 2000.
The first book to attempt pulling in the Web design reigns. In a time of splash screens and designer hacks this book was a very needed slap in the face (courtesy of usability).

The Humane Interface: New Directions for Designing Interactive Systems, Jef Raskin, 2000.
Raskin's book is a great look at the possibilities and problems in interface design. Don't read this one first, Apple and Tog are better intros to the field.

The Art & Science of Web Design, Jeffrey Veen, 2001.
Jeffrey Veen gets it: Web design is a union of function and form. Well written and very informed.

Don't Make Me Think: A Common Sense Approach to Web Usability, Steven Krug, 2000.
A concise to-the-point book about designing Web interfaces for users. What you'll learn: keep it simple.

Tog on Software Design, Bruce Tognazzini, 1996.
The better of Tog's two books. The first one is actually just a collection of his columns as an Apple "human interface evangelist". In this book, Tog theorizes and expands on some of his favorite interface concepts such as "Fitss' Law".

Web Style Guide: Basic Principles for Creating Web Sites, Patrick J. Lynch & Sarah Horton, 1999.
The first Web design class I taught, I used this book. It is a nice overview of the design considerations implicit in Web design. Though, as one student commented, if you follow all their "style guides" you end up with a pretty drab brochure-like site.
